History of the Frgál
What is a Frgál and how did it come about?
The frgál, or “Pie” Kolache, is a unique and centuries-old Wallachian pie. Every slice gives distinct flavors to be relished with each bite. This dessert originated in the late 1800’s in the easternmost mountain Moravian region of the Czech Republic, featuring sauerkraut or beet filling.
Round like a small pizza, these desserts are sweet and have been adapted to come in a variety of fruit fillings. The test of a perfect frgál is the dough. A frgáls dough must rise three times; first immediately after the dough is made, second after it’s been divided into individual bowls, and lastly right before the dough is put in the oven. This process ensures proper tenderness of the pie.
Traditionally, frgáls are made for weddings and holiday celebrations. Its unique bake is quite sensational, as its appearance is beautifully decorated in rich fruit flavors and colors. As a tribute to its enduring popularity, the frgál known as a unique bakery product – a delicacy. In fact, it became protected with a geographical indication in 2013 in the Czech Republic.
